Brandt's Chophouse, Old Town Wichita. Kansas beef hangs 28 to 60 days in the glass-front room on Rock Island, and the whole sidewalk can watch. Regulars ask for a hook by number. Any server can tell you which hook was yours.
Aging room, this eveningRead at 4:30 pm
We cut steaks from theseTenderloin, under the loinBurger grind and braises
We weigh every steak raw. We season it with sea salt. We crack pepper over it. We send it out with a roasted garlic half beside it. There is no vegetarian main course on the menu.
One grill. One cook on it, all night. The bark from the aging room caramelizes fast, so we pull most steaks a few degrees early and let them rest on the board.
Taken at the thickest point, off the grill. Aged beef is best at medium-rare or below.
One side for every two people. That is the rule at most tables. Then someone orders the second potato they swore they would not eat.
A primal arrives from the ranch. We tag it with a hook number and a date that same day. We hang it. Air at 34°F moves over it around the clock, and it gives up nearly a fifth of its weight. The flavor comes from what the room takes.
At 28 days the beef is tender and still tastes clean. Past 45 days it turns nutty and deep. At 60 days it is for guests who already know they like it.
A 24 lb rib goes on the hook. Near 19 lb comes off. Then the dry outer bark is trimmed away before the knife goes in. You pay for the steak, and for the weight the room took.
Three family ranches within 80 miles of Wichita. The ranch and county are on the hook tag, and on your check.
We pour reds with enough tannin to stand up to a 45-day rib. We choose one barrel of bourbon in person every spring, and that barrel carries our name.
Forty more bottles in the cellar list, from $58 to a 2016 Saint-Julien at $210. Corkage is $25, waived on Tuesdays.
Old fashioned made with the barrel pick, $15. Manhattan or boulevardier, $14.
Rehearsal dinners. Client dinners. Retirements. Every one of them starts the same way: a walk through the aging room, and your guests pick the hook.
The original 1912 walk-in, insulated door still on its hinges. One long table, a window into the aging room.
Above the dining room, brick walls, its own bar and a screen for toasts or slides.
Six stools facing the butcher's case. The cook cuts your steaks in front of you.
Book a table. Hold a steak off hook 3. Take the Cooler for a board dinner. Send a gift card to someone who has earned a 45-day ribeye. Let the phone ring for somebody else.
