Saturday morning I mix. After lunch I ball it by hand. Then it sits in a 38° walk-in till Tuesday.
That slow cold rise is the blistered edge. It’s also why the crust doesn’t go leathery on the drive home.
Flour: Kansas hard red winter wheat, cut with Italian 00.
When tonight’s 180 balls are gone, the oven closes. That’s happened at 7 pm on a Friday, and honestly it was my fault. I’d mixed for a slow weekend. A chain can push a button and make more. I can’t.
Mondays I’m closed. Oven cools, hearth gets swept. Tuesday to Sunday, something’s always cheaper.
All night, dine in or pickup.
With any pie. Eight for $6.50.
12 in cheese or pepperoni, under 12s.
The seasonal white pie, while corn lasts.
Full menu until the last ball is gone.

The site runs four jobs on its own, so nobody at the counter reads an order back while a pie burns. Here’s each one, the way you’d see it.
Online or by phone. A text confirms the slot and your order number.
I pull your dough from the cold eight minutes before your slot, never earlier.
Ninety seconds in the oven, then the box goes on the pickup shelf.
Your name is on the box by the door. Paid already, so no line.
Pick a pickup time. The oven bakes eight pies every ten minutes.
Online ordering with honest pickup times: slots close when the oven is full, so a 6:10 order is ready at 6:10. It is a plain web page, so it works in Safari on an iPhone as well as anywhere else.
Ready on the pickup shelf at about 6:08.
Shelf B, third slot. Your name is on the box.A live pizza tracker fed by the make line, with a text when the box hits the shelf.

The phone’s for orders. Everything else people keep asking is here.
There is a free lot behind the building with the entrance off the alley, and street parking on Douglas is free after 5 pm. The pickup shelf is just inside the front door.
Not for tables of six or fewer. The counter and patio are first come. Groups of 8 to 20 can book the patio long table online, up to two weeks ahead.
Every pie lists its allergens in online ordering. The kitchen is nut-free apart from the Nutella calzone, which is made on its own board. The gluten-free crust bakes on the shared deck, so it is not safe for celiac disease. The marinara pie is dairy-free and vegan.
The block party feeds 10 to 12 with an hour's notice. For 20 or more, order a day ahead so Jen can mix extra dough, and we will cut the pies into squares if you ask.
24 hours for up to ten pies and 48 hours beyond that. The oven turns out about 48 pies an hour. Pickup, or delivery inside the ring for $4. The oven stays here, it’s 4 tons of firebrick.
