Held loaves, not on this sheet. Back shelf. A name on each tag.

Behind the glass, left to right

Mixed, shaped and baked in this building. Started the night before. Counter prices, Kansas sales tax already in them. Nobody does math at 7 a.m.

Bread

Out of the oven 4:40 to 5:10

  • Country sourdough$9White and a little whole wheat, 30-hour ferment, dark crust on purpose.
  • Seeded rye$1040% rye, sunflower and flax. Twenty-four loaves a day.
  • Kansas wheat sandwich loaf$8Pan loaf, sliced if you ask. Freezes well.
  • Half loaf, any of the above$5For a kitchen of one.

Kolaches

Out of the oven 5:50 to 6:00

  • Apricot$3.25Dried apricots cooked down with lemon. A grandmother's ratio.
  • Poppy seed$3.25Ground fresh. Milk, honey. Gone before 8, most days.
  • Cream cheese$3.25Streusel on top. Posypka, the word for it.
  • Fruit of the week$3.50This week, tart cherry. Next week, the orchard decides.

Klobasneks

Out of the oven 6:10

  • Sausage and jalapeño$4Smoked sausage, a meat locker in Rose Hill. Kolache dough around it.
  • Ham and cheddar$4The one kids order.
  • Egg and potato$4Saturdays only. Vegetarian.

Sweet things

Out of the oven 6:20 to 7:00

  • Cardamom knots$4.50Swedish-style, pearl sugar. Not cinnamon rolls.
  • Brown butter chocolate chip$3Baked at 7. These last longest.
  • Slice of the cake of the day$6From the extra layer of a custom order.

Wheat in everything. Butter, eggs and milk in most. On Sundays, poppy seed and the cardamom knots share a bench with the walnut filling.

A dozen kolaches, $34, any mix

Two dozen or more: ordered by Thursday noon, for Saturday. Later than that, no promise on the poppy seed.

Twenty-four baskets

Twenty-four proofing baskets.
Twenty-four loaves of rye.
Offers to buy more baskets, several.
The oven holds what it holds.

Sourdough starts the morning before.
Mixed at 6 a.m., folded through the day, shaped at night.
Cold in the walk-in until 3:15.
A noon loaf would have started yesterday.
So, no second bake.

Paid online, a name on a paper tag.
The back shelf, until close.
The loaf, there before you.

6:00 a.m.Day before. Mix, then fold four times through the afternoon.
8:30 p.m.Shape, into the baskets, into the walk-in overnight.
3:15 a.m.Oven on. First loaves out around 4:40.
“People ask if I can check in the back. There is no back. The back is the oven, and Marta is standing in front of it.”
Jess Rader, on the counter Wednesday to Saturday

Layer cakes, ten days ahead

Real buttercream. Made to order. Ten days' notice. In May and December, three weeks: every graduation and office party in Butler County, all at once.

Writing on top, free. Fresh flowers, $8, from a grower in Augusta, so they depend on the week. Piped flowers, free. Steady hands.

Buttercream only. Fondant tastes like a candle. Nothing safely gluten-free, either. There is flour on the ceiling fan.

Lights out at eight

The baker, asleep by 8. The orders, still coming in. The same question, answered for the fortieth time. Poppy seed people, spared a drive for nothing.

Hold a loaf, pick a time

Paid ahead. A half-hour window. On the back shelf, with a name on it.

A text when it's gone

One thing, followed. A tap from Jess on the counter tablet, and a text goes out before anyone gets in the car.

Kolache card

A punch for every dozen. The tenth dozen, free.

Cake deposits

The ticket above, made real. A $25 deposit holds the day for people who mean it.

Standing orders

The same loaf, every week. Charged on Thursday. A week skipped from the text.

The yellow door

1400 block of W. Cloud Avenue, Andover, KS 67002
Between the tax office and the barber.
(316) 555-0124

Parking out front and around the side. Calls between 6:30 and 9: Jess, with flour on the phone.

Can you hold something if I call?

Only through the website. A phone hold needs someone to write it down while the oven timer goes off. Online holds close Friday at 6 p.m. for Saturday.

Do you do wholesale for coffee shops?

Two coffee shops in Andover, already. No more room in the oven this year.

Is the sourdough really just flour, water and salt?

Yes. And the starter: flour and water, alive since 2019.

Do you have seating?

Two stools at the window. By 9, empty. Everyone gone to work.
